National Guacamole day happens every year on 16th September and is the perfect time to showcase your best guacamole recipes.


This year, we decided to do something a little different and set up a Guacamole tasting session in our office, asking staff to vote for their favourite one. It was a blind tasting,with no list of ingredients released till after the tasting... Let's see how we got on.



Of course, we had to supply tortilla chips for dunking!


The results are in and the winner was:


Recipe A first. 🥇

It’s only fair that we share the secret recipes with you, so here they are:


Recipe A:




1 small onion

2 large ripe avocados (scooped out of the skins)

1 tsp lemon juice

5g fresh coriander leaves

¼ tsp salt


Method:


Finely chop the onion (5mm pieces). Roughly mash the avocados. Mix with onion and salt, then mix in the lemon juice. Garnish with the coriander leaves.


Recipe B



1 small onion

2 large ripe avocados (scooped out of the skins)

1 tsp lemon juice

15g fresh coriander

1 Fresno/Serenade chilli

¼ tsp salt


Method:


Cut the onion into quarters, keep one quarter, and then dice into small pieces. Deseed chilli. Remove 5g of the coriander leaves and set aside. Put the rest of the coriander, the onion and chilli in a blender and whizz until smooth (or use a Mortar & Pestel). Mash the avocado smooth and stir the puree in. Add salt and lemon juice and mix. Garnish with the coriander leaves.


Recipe C




1 small onion

2 large ripe avocados (scooped out of the skins)

1 tsp lemon juice

15g fresh coriander

1 clove of garlic

¼ tsp salt


Use another Quarter of the onion and dice into small pieces, peel garlic clove. Remove 5g of the coriander leaves and set aside. Put the rest of the coriander, the onion and garlic in a blender and whizz until smooth (or use a Mortar & Pestel). Mash the avocado until smooth and stir the puree in. Add salt and lemon juice and mix. Garnish with the coriander leaves.

Blue Cheese & Basil Guacamole


3 avocados – scooped out of skin

½ cup crumbly, creamy blue cheese

1 tomato – deseeded and chopped finely

¼ red onion

1 handful of fresh basil

½ lemon (for juice)

Salt & pepper to taste


Scoop out the avocado into a bowl and mash partially. Add in the blue cheese and lemon juice and mash. Add salt & pepper to taste as you mash. Mix in the onions, tomato and shred the basil into the bowl and mix together to make a smooth consistency.


Serve immediately with another drizzle of lemon juice or chill in the fridge, fully covered till serving.
